You know how homemade yeast bread recipes usually call for you to punch down the once risen dough and then for a little more roughing up before you let it rest again? That period of rest is very important. As is the punching down part.
I bring our attention to fresh homemade bread for a reason. Today I sort of feel like the bread dough, immediately after the punch but prior to the re-puffing stage. The recipe typically calls for the dough to be covered again with a nice clean and warm kitchen towel while it rests and re-doubles its size.
